Isomalt (E953) – vegetable sugar substitute, similar in appearance to sugar – white crystals with no aroma, clear sweet flavor. Crystals contain approximately 5% of water.
Isomalt (palatinit) adds volume to products, provides the required structure, medium sweetness; used in cake decorating, chocolate, caramel (both soft and hard), dragee, ice cream, jellies, jam and chewing gum.
The main quality of isomalt – regulate metabolism and improve body health.
